The witnesses of memory Vittorio and Giulia are husband and wife, owners of a dairy situated in San Liborio, Piano di Sorrento. This particular kind of farm is very spread in the Penisola Sorrentina. The video is shot in the dairy, where the interviewees take us discovering the tradition of provolone. They tell us the reason why the cheese is named ‘provolone del monaco’ (monk). They explain us the old processing steps of its making still in use.
